Chinese New Year Vegan Feast

A Vegan Chinese New Year celebration can be full of flavour and colour. To prove that, we are bringing you recipes that are sure to satisfy all guests from appetizer to dessert. 

Vegan Jackfruit Spring Rolls - Wealth
Spring rolls (春卷 Chūnjuǎn /chwnn- jwen/) get their name because they are traditionally eaten during the Spring Festival. It is a Chinese New Year dish especially popular in East China 

Lucky Saying for Eating Spring Rolls
黃金萬兩 (hwung-jin wan-lyang/): 'A ton of gold' (because fried spring rolls look like gold bars) — a wish for prosperity.

Ingredients (Makes 8 spring rolls)

Instructions

  • To prepare the filling, please follow these steps.
    1. Jackfruit - drain water from the jar. Heat up the frying pan with about 2 Tbsp. of the sunflower frying oil and heat up the black pepper. Add the jack fruit chunks and heat until golden brown and crispy. Add in the tamari soy sauce and stir fry till the soy sauce soaks into the jack fruit and set aside.
    2.  Carrots - Julienne the carrots. We used this slicing tool for easy preparation. Heat up the frying pan with about 1 Tbsp. of the toasted sesame oil and toast the white sesame. Add the carrots and heat until the texture gets softer and set aside. 
    3. Shiitake mushrooms - slice them in about 2mm and set aside.
    4. Vermicelli noodles - Pot of hot water bring to boil noodles in and boil for about 1 -2 minutes then drain. Set aside.

    Now your fillings are ready!
     
  • Carefully peel off one spring roll wrapper. Cover the unused wrappers with a plastic wrap or wet kitchen towel to prevent dry out and brittle.

  • Place the wrapper with one of the corners near you, in a diamond position. spread 1 tsp. of the coriander pesto on to the wrapper and put the fillings on top in one line. 2 -3 slices of shiitake,  2-3 tablespoons of jackfruit, 2 Tbsp. of the carrots and handful of cooked vermicelli.  

  • Roll one edge towards the inner side covering the filling. Bring the sides to the centre. Finish rolling and use water to seal. Keep rolls covered to prevent from drying.

  • Fry spring rolls until golden brown and crispy or brushes spring rolls with sunflower oil and place spring rolls in a baking dish and bake until golden. About 20-25 minutes. Serve with our raw vegan sriracha sauce, Enjoy!

Soba Longevity Noodles — Happiness and Longevity
Longevity noodles (长寿面 Chángshòu Miàn /chung-show myen/) unsurprisingly symbolize a wish for longevity. Their length and unsevered preparation are also symbolic of the eater's life.

Ingredients (quick and healthy!)

Easy ready-made vegan dipping broth

Instructions

  • Bring 2L of water to the boil, add noodles (100g per serving) and stir. Simmer for 10 minutes then rinse briefly under cold water. Serve chilled with dipping broth. Enjoy!

Dipping Broth

To make Dashi Soup Stock 
Soak the above ingredients in the refrigerator overnight to make the vegan dashi broth.
Instructions

1.    Put the soy sauce, mirin and cane sugar in a small pot and bring it to boil to melt the cane sugar and also to evaporate the mirin's alcohol.
2.   Remove the mixture off from the flame and add 100ml of the mixture into the 500ml dashi broth to make the dip.
3.    Serve it with the cold soba noodles! 

Sweet Rice Balls in sweet ginger soup with organic edible dried flowers — Family Togetherness
Sweet rice ball (湯圓 Tāngyuán /tung-ywen/) people eat them throughout the Spring Festival. The pronunciation and round shape of tangyuan are associated with reunion and being together. That's why they are favored by the Chinese during the New Year celebrations..

團團圓圓 (Tuántuán yuányuán /twann-twann ywen-ywen/ 'group-group round-round'): Happy (family) reunion!

Ingredients - 2ppl

Round Dumplings 
  • 60g Shirtama rice powder 
  • 15g Jo-shin powder
  • 75ml Water
Ginger sweet soup

Instructions

  • Put the Mochi ingredients in a bowl and mix it.
  • Make 12 round balls. ( about a 1 cm diameter small ball)
  • Boil Mochi balls in boiling water.
  • Mix amazake, ginger drops and hot water in a mixing bowl to make the sweet ginger soup.
  • Place Mochi balls with ginger sweet soup and serves warm with edible flowers on top. Enjoy!
