1. Organic Japanese Hojicha 

Clearspring Organic Hojicha Roasted Green Tea is grown in the hills around Kyoto, famous for having the ideal climatic and soil conditions to produce some of the best quality teas in Japan. The subtle smoky flavour comes from using selected mature leaves which are specially prepared by our expert tea producers. The leaves are gently roasted and directly packed to seal in the full flavour.

How to Use 

For the perfect brew, add 3 heaped tablespoons of tea per cup in a teapot. Add 1 litre of boiled water and steep for 2-3 minutes. For a stronger flavour, steep for 3-5 minutes.

Store in a cool, dry place.

 

 

2. Organic Matcha Green Tea

Clearspring Organic Matcha Green Tea is a delicious blend created especially for us by our expert tea producers in Japan. It combines the exceptionally light, smooth and refreshing flavour of Japanese Sencha with distinctly rich and exquisite ceremonial grade Matcha Powder. Skilfully blended and packed on our tea producers’ estate immediately after production to ensure the freshest quality.

 

Matcha is finely ground green tea leaf powder and is the most prized amongst Japanese teas. It has been drunk as part of the tea ceremony for 900 years as well as by Buddhist monks  during long days of meditation.

This very concentrated form of green tea is drunk as a fine powder diffused in liquid so you actually ingest the whole leaf, consuming every last bit of goodness.

How to Use

Although making a cup of tea may seem like a really simple thing, making a really good cup of tea is an art!

 

Qualities: With a slightly grassy aroma and deep rich taste, sencha is the classic Japanese green tea. At Clearspring we harvest the tender first of the season leaves, which are known to be the best due to their brighter colour and gentler, slightly sweeter flavour.

 

Quantities: 1 teabag per person

 

Water temperature: 70-90°C - brewing at this temperature will stop the tea from becoming bitter while allowing the full flavour of the tea to come out.

 

Brewing time: 1-2 minutes

 

Store in a cool, dry place.

 

 

 

3. Organic Japanese Sencha

This light and refreshing tea is prepared in Kyoto from the season's first tender young leaves harvested at their peak of flavour in late spring. The leaves are briefly steam, rolled and cooled by the special Japanese Sencha process. Then immediately packed to seal in their fresh taste and aroma.

 

We are delighted to announce that this organic Sencha tea has won a ‘Highly Commended’ award and has been ‘Commended By Consumers’ in Organic Food Awards 2012. Fantastic recognition of the high quality and great taste of this product and an excellent platform from which to launch our new organic Sencha blend range.

 

The traditional Japanese practice, not usually found elsewhere, of steaming green tea leaves immediately after picking preserves their unique properties. This steaming, sometimes referred to as the Sencha process, takes place within 24 hours of harvesting and inhibits the enzyme activity that causes oxidisation, enabling the tea to retain its bright emerald green leaf colour and preserving its nutritional benefits

How to Use

4. Organic Japanese Kukicha

This mild and soothing tea is from select twigs and stems of the tea bushes harvested late in the season, when the plant's caffeine levels are at their lowest. The twigs are steamed, dried aged to develop their flavour, then roasted and mixed with a small portion of roasted tea leaves.

It has a lower caffeine content than coffee, black tea and green tea, which makes it ideal for children and adults alike.

Freshly harvested green tea leaves are steamed and rolled following the traditional Sencha process, then combined with roasted brown rice and packed directly on the tea estate to seal in the full flavour.

How to Use 

For the perfect brew, place 3 heaped teaspoon of tea per person in a teapot. Boil fresh water and leave to cool to ideally 70°C-90°C before pouring over the tea. Infuse for only 1-2 minutes for the best flavour.
